Kampot pepper is grown in the province of Kampot, located in the very south of Southeast Asian Cambodia. It is an area that, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the highest quality in the world. It is no wonder that this pepper has gained protected geographical indication, similar to French champagne. We purchase pepper from small family farms under direct trade conditions, which ensure fair compensation for each grower, and we strive to promote this approach among other traders. The individual types of Kampot pepper differ from each other in taste and aroma, which you can hardly find in pepper bought in regular supermarkets.

Green fermented pepper brings an absolutely delicious taste of fresh green peppercorns with gentle grace. The lyophilization process elevates it to the heights of divine manna with a subtle touch of sea salt flower from marine salinas. The soft structure melts on the tongue, gradually developing in the mouth from a backdrop of gentle freshness, through pleasant spiciness to a light acidity and tones of fresh green pepper.

What makes our technology of fermentation and subsequent lyophilization of green pepper so unique? How did we manage to transform a peppercorn into a perfectly complexly flavored pepper flake?

Fermented Kampot pepper contains fresh green grains processed using an old Japanese fermentation method directly in Cambodia. A pinch of fleur de sel, obtained by evaporating sea water in Kampot, is added to the pickled grains. During the subsequent lyophilization, the grains are freeze-dried, which removes moisture and further enhances the already refined taste of the pepper, which we developed as the first in the world. By crushing this fully flavored pepper, fine flakes are created, which are an authentic form of green pepper with a taste of salt and green tea.

Thanks to the careful selection meeting the strict quality requirements for pepper exported from Kampot, set by the Kampot Pepper Association, only the best grains are handpicked. They are then vacuum-packed to preserve quality and freshness during the journey to the Czech Republic, where they are further selected, packaged, and delivered to your table.

Usage

Pepper flakes are crushed after fermentation and freeze-drying. This is appreciated in every kitchen where there is no grinder or mortar. Thanks to two different processing methods, the flakes are mainly suitable for seasoning dishes on the plate, similar to how pyramid sea salt is used.

We pack pepper in resealable bags with a capacity of 20 to 100 grams. Thanks to the materials used and the special bag sealing technology, no air or moisture reaches the pepper.
