Processing

The handcrafted delicate work, which has remained unchanged for hundreds of years, is what the harvesting of coarse sea salt looks like.

It crystallizes on the surface of special pools called salinas, into which ocean water rushes and is enclosed. Under the influence of the sun and wind, the water gradually evaporates, and on its surface, salty crystals form.

The resulting crystals are collected by hand, without any mechanical intervention, using only long wooden rakes. As a result, the salt’s structure remains consistent, and the salt is perfectly pure and of the highest quality.

The harvesting and processing of sea salt, much like pepper in Kampot, are handled by individual small farms. Families of farmers pass down the tradition of producing sea salt from generation to generation. The salt is therefore in complete organic quality, without the need for any further refining. And just like with pepper, even from these farmers, the salt we buy directly, ensuring that they receive the proper reward for their hard work.

Usage

Coarse-grained sea salt can be used for everyday cooking.

Season with it, use it when pickling and preserving meat, fish, and vegetables, prepare marinades from it, let the meat rest in a salt crust, or use it to garnish the surface of baked goods.

Origin

Perfectly pure, full of flavor and minerals, such is the salt from the salt pans of Kampot province in Cambodia.

The tradition of harvesting sea salt in the region is as deeply rooted as the cultivation of pepper. The conditions here are absolutely ideal. Intense sun, ocean breeze, and a welcoming climate For hundreds of years, they have encouraged the establishment of salt pans and the harvesting of salt from the ocean. Its quality can be compared with sea salt from some of the most renowned regions in France or Portugal.
